Ingredients:
100g organic butter
¼ cup honey
1 tsp. bicarbonate soda
2 tbsps. boiling water
1 cup rolled oats
½ cup buckwheat flour
½ desiccated coconut
½ cup LSA mix
1 tsp. ginger powder
Method:
Line 2 flat trays with baking paper and set aside. Preheat the oven to 180°c.
Place the oats, buckwheat flour, coconut and LSA mix into a large bowl and mix through with a wooden spoon. Set aside.
In a small saucepan, gently heat the butter and honey until it’s melted. In a little cup, mix the bi-carb soda with the boiling water, and then add it to the buttery mixture, stirring well. It may bubble up just a little.
Pour this over the dry ingredients and mix well. Roll into small balls and place onto the trays, making sure you leave room for them to spread. Flatten slightly. Pop in the oven for approx.10 -15 minutes, or until golden in colour. Keep an eye on them, and cook a little longer if you like your biscuits crunchy.
Pull them out of the oven and allow them to cool on the trays, before storing in an airtight container.
Makes approx. 20 biscuits
