Ingredients
1 cup coconut milk
3 tbsp. chia seeds
Juice of 1 lime (approx..60ml)
Crumble ingredients:
½ cup almond meal
½ cup desiccated coconut
1 tbsp. honey
1 ½ tbsp. raw cacao powder
Pinch himalayan salt
Strawberries for garnish
Method
In a medium sized bowl mix together the coconut milk, chia seeds, and juice from the lime until well combined.
Place in the fridge while you make the chocolate crumble.
In small food processor bowl place all the crumble ingredients and blend until they stick together. You can place this in the bottom of little bowls/jars as well as using as a topping.
Spoon the pudding mixture into each serving bowl (4-5) and leave in the fridge to set. Just before serving garnish with fresh strawberries or berries.
For a very quick dessert to make ahead of time, you can simply make the pudding without any topping other than fresh berries. Less than five minutes to mix together, and then a few hours in the fridge to set.
