Ingredients
Base:
1 cup almonds
12 medjool dates (pitted)
½ cup shredded coconut
¼ tsp vanilla extract
Pinch of Himalayan salt
Berry Filling:
1 cup macadamias
¼ cup melted coconut oil
2 tbsp. pure maple syrup
½ tsp vanilla extract
1 cup mixed berries
Lemon Filling:
1 cup macadamias
¼ cup melted coconut oil
2 tbsp. pure maple syrup
½ tsp vanilla extract
½ cup fresh lemon juice
Method
Base
Blend almonds, dates, vanilla salt and coconut in processor until well combined. Then sprinkle bottom of spring form flan with a little coconut and press mixture firmly into base. Place this into the fridge or freezer whilst making filling.
Filling
Start with lemon filling. Add all ingredients to processor and blend until smooth and creamy. Pour layer into base and even out with spoon. Place in freezer.
Add all ingredients for berry filling into processor and blend until well combined. Add this layer on top of the lemon layer and place in fridge or freezer to set.
Garnish with a few fresh berries or macadamias.
