Recipe of the week: Nutty Choc Chia CookiesMakes approx. 24 biscuits


1 cup almonds

1 cup hazelnuts

¾ cup buckwheat flour

¼ cup coconut flour

¼ cup pure maple syrup

5 medjool dates

3 heaped tbsps. raw cacao powder

3 tbsps. chia seeds

3 tbsps. coconut oil

1/3 to ½ cup water


Place the nuts into the food processor and blend for a minute until a flour forms. Add all the remaining ingredients leaving the water until last, adding a little at a time until the mixture forms a sticky dough.

Roll tablespoons of mixture into balls using your hands, flattening gently on the tray.

Bake for approx. 20 minutes or until they are firm to touch and are slightly brown. Leave to cool on trays before eating.
