Quick Vegetable Chilli
(4-6 serves on its own/ great as a side dish for more)
Dinner ready in under half an hour. Got to love this one!!
Ingredients
1 lge zucchini
1 lge sweet potato
1tin borlotti beans (rinsed)
1 tin chick peas (rinsed)
1 tin filtered water
2 tbsp. tomato paste
Approx. 10 button mushrooms (diced)
2 – 3 long chillies (depending on how hot you’d like it to be) Chopped fresh herbs (rosemary, marjoram/oregano, thyme) Freshly cracked pepper and himalayan salt
Method
Heat a little oil in a large pot, adding the diced zucchini, diced sweet potato, borlotti beans and chick peas, gently heating for a few minutes until sweet potatoes have a little toasted colour to them.
Next add the tomatoes, tomato paste and 1 tin full of water, stirring through. Simmer for 5 minutes or so before adding the diced mushrooms, chillies and fresh herbs.
Cover and simmer until the sweet potatoes are soft when prodded with a fork. Have a little taste at this stage and add a little salt and pepper to your desired taste. You can have on its own or serve with a little brown rice.
Meal complete! It’s that simple! And all ready in under half an hour.
