Recipe of the week: Raw Cacao Mousse


6-8 medjool dates

2 ripe avocados

2/3 cup coconut cream

2 tbsp. raw cacao powder

dash of vanilla extract concentrate

A pinch of Himalayan salt



Place pitted dates into a blender/processor and blend until they form a sort of paste, well chopped.

Place the remaining ingredients as listed into the processor and blend until smooth. Scrape down the sides when you think it’s all blended and blend just a little longer. You want it really smooth, with no lumps of avocado visible.

Scoop out into a bowl or individual small bowls, depending on how many people you need to share with, cover and refrigerate to set overnight. (Serves 4-6 people)


Just before serving, garnish with a few fresh blueberries or strawberries.
